EC2 suddenly cannot be accessed anymore, CPU dropped in monitoring

We have 2 EC2s, one 'production' and one 'acceptance'. On these EC2 we have a docker container running for airflow. On production, every day data is processed, on acceptance not. Sometimes, the EC2 'breaks'; we cannot access the EC2 anymore via Putty, it only gives a black screen. Moreover, the server is also not working anymore: the daily processes stop working. We thought this was a memory problem with the data on the EC2, however, now also the EC2 of acceptance broke during the weekend, while no data is processed daily on the 'acceptance' server.
If I look at the monitoring of the EC2, I see that the CPU suddenly dropped to 0% (generally around 20% because of docker/airflow). Also Network In/Out dropped.
Rebooting has solved the issue. However, we don't want stuff to be able to break in the weekend.
Does anyone have an idea why this could happen? We are using an m4.xlarge.
